Preface: So I wrote this post Thursday morning at the airport while I was waiting for my flight but I’m not uploading this until today (Saturday day 2 of KetoCon), sorry for the delay.
The Wednesday leading up to my flight out to Austin was a whirl-wind. Literally all my days seem to look like this recently. I worked 6:30a-11:30a, I had a hair appt at 11:40, then I went home let out the dogs and picked up my friend Erica. Then we went and got our nails done and then we went up to Best Buy because I had to buy a new laptop because I spilled wine on mine. I previously had it fixed, but it kept on reverting back to the continual black screen loop. I gave in an upgraded to the mac book pro. Previously I had the mac book air—which really didn’t meet my needs anymore d/t it being super slow to edit pictures and videos. Plus this new mac book pro was just as cheap as my air was 2 years ago, plus its just as small but wayyyy quicker.
After that we went to vitamin shoppe to pick up some kept friendly foods for my trip—-I totally struck out. The only thing they had were these disgusting plant protein shakes that had 1 net carb. I got a chocolate and vanilla and took one sip of each before throwing them out. After that we headed to world market where I purchased some props for food blogging and then we stopped at total wine so Erica could pick up some pumpkin beer.
After that we made our way to sushi because it was $7 roll night—my favorite night. I’m cheap and need to save money. Recently my well got struck by lightning and I had to get a new well, submersible pump and chlorination system because they were all lost in the storm. Talk about a few weeks of smelly grayish water.
After sushi I dropped off Erica and then I spent the next 2 hours responding to emails. By now it’s 9pm and I haven’t packed one piece of clothing or stuff for the conference. By now I’m running on adrenaline trying to figure out what to pack and make sure my suitcase isn’t too heavy. I finished packing around 11pm but then I laid in because for about another hour before I could sleep because of my excitement and anticipation.
So why am I going out to Austin when Texas was recently hit by a massive hurricane? For KetoCon of course! KetoCon is a conference with podcasters, researchers, doctors, dietitians and just regular people sharing their stories and successes with a ketogenic diet. Originally Erica, Faith and I were going to be making a road trip out that way, but that plan was detoured d/t the storm and the other 2 girls not being as interested in keto as I am LOL.
Morning of my flight….
Like normal I turned off my first 3 alarms and woke up at 6am—about an hour before I needed to leave my house. I got up, took care of the pups and started on my normal routine. Every morning I’ve been making this super tasty fatty protein coffee, I’ve been making it the same way every day until today. As I am typing this I realized I made it differently. I totally forgot to add my C8 (MCT oil). In addition to the C8 I usually add 1 scoop of low net carb protein powder—my recent obsession has been Quest’s Cookies and Cream, 5g creatine monohydrate, 1 scoop grass fed collagen peptides, 1/3 cup coconut cream or organic heavy whipping cream. I put this all in a shaker cup with about 6oz of iced coffee and about 6oz of water. So it’s really not that much caffeine. After I shake it, I add a few ice cubes and then top it with sugar free heavy whipping cream. I just use store bought as of right now since I’m too busy/lazy to make my own.
I for once, left the house on time. I missed all of the traffic on the toll road leading to the off sight parking I use. I get there and totally freak out—they were only taking spaces for reservations. Luckily they had a few covered spaces that were a little pricey but I sucked it up and just went for it since I was already there. The first shuttle was completely full but the second one came super quick. There was no line at the airport check in counter and I quickly made my way to security. Uncharacteristically the regular security line said only 4-8 minutes and TSA (which I used) only had 2 people in front of me.
Oh Starbucks, I attempted to wait in line, mainly because I was bored—I really didn’t need any coffee, but after 5 minutes and the line of about 25 only moving a few feet, I opted to leave and sit my happy butt down at my gate—-which was the furthest away from the tram might I add LOL. Here I sit, typing up this extremely detailed description of my day because I cannot figure out how to connect my new laptop to the internet so I can edit some pictures, movies and answer emails.
So, if you’re reading this I probably figured out how to connect to the internet at the airport or I just uploaded this once I got to my Airbnb. This is the most irrelevant post I think I’ve ever written on my blog but it surprisingly feels satisfying.
So in this crazily descriptive post I just wanted to let you know I’m going to Austin to hang with a bunch of cool keto peeps that I’ve never met before, but have heard their voices many times on podcasts. I will try and do a follow up post with takeaways and info about cool new keto products that I think you all with like. Thank you for reading and I love you all.
