It’s Monday! I know for most of us that means it’s the beginning of a new work week which a lot of us dread, but Monday in my house means Meatless Monday. For today’s Meatless Monday meal, I had a Kale and Harvest Grains Salad made with Suddenly Grain Salad.
Monday’s are my day off from my normal 9-5 job, so I used today to catch up on a bunch of errands, walk the bridges with one of my girlfriends (~4 miles), write this blog post and create this delicious salad. I also got in an upper body workout at the gym, and I finished my night by watching football & hoping that Jordan Mathews and Cody Parkey didn’t score many fantasy points.
I still haven’t picked what half marathon I want to do, but I keep on increasing my mileage, switching up the types of runs/walks I do and stay consistent with my weight lifting sessions. I have decreased my weight lifting sessions to 2 upper body and 2 lower body sessions per week to compensate for the addition of all of the running and walking that I have recently added.
One thing that I have noticed since running again, is that my normal workout shoes (Nike Dual Fusion TR) are no good for running. My feet are on fire after running. They are great for weight lifting since they are very flat, but not the best for running since they don’t have very good support. I guess I will have to be making a stop at my local running store to get fitted for some real running shoes if I’m going to be taking this training seriously.
Now on to the recipe. This recipe is very simple and quick to make. It has very minimal products and is done in minutes!
Kale and Harvest Grains Salad + Giveaway
- 1 Package Suddenly Grain Salad Harvest Grains
- Fresh Kale chopped
- Shredded Carrots
- 1 tablespoon water
- 1 tablespoon olive oil
Cook Suddenly Grain Salad Harvest Grains as directed
Make dressing that is included as directed.
Once grains are cooked, rinse under cold water to cool off.
Mix in salad dressing to grains.
Add desired amount of kale and shredded carrots to a salad bowl and top with a 1/4 of the cooked grains and dressing mixture.
I only ate 1 serving of this in my Kale and Harvest Grains Salad and the rest I meal prepped for lunches for the rest of the week. I went ahead and chopped up extra kale and put it in baggies along with some shredded carrots so I can have salads for lunch and not worry about it getting all soggy.
