Today was day 5 of my 30 day vegan challenge. How did I fare?! Keep on reading to find out!
Today was rough. I was so tired from the lack of sleep from the bachelorette party the night before. We went to bed around 3:30am and my body had me up at 7:10am. No hang over or headache, but just tiredness from lack of sleep.
30 Day Vegan Challenge
The day began with a traffic free drive back home from Orlando with two of my best friends.
I am so lucky to have them in my life. They have been with me through thick and thin. Even though they gave me a hard time at first about choosing to do this 30 day vegan challenge, they fully support doing it (even though both of them don’t think I will be able to follow it because they know how much I used to love steak, bacon, ribs, and insert any southern meal).
On the car ride home, Erica and I got to talking like we do so often about traveling and blogging LOL.
We talked about combining both and maybe going to the #BlogHerFood16 conference in Austin, Texas.
It’s actually being held at the Hilton in downtown Austin were I went to the Annual ISSN Conference last June.
I absolutely love Austin! It’s one of my favorite cities! It’s so vibrant. It has amazing food, lots of culture, live music everywhere and people are so active there! They have bike paths everywhere and bike lanes on the streets (and not the little ones on the side of the road which most bigger roads have). Also they have cute little bikes that you can rent everywhere and explore the whole city with (that’s what I did last year!).

Day 5 FOOD INTAKE
Dunkin Donut’s medium iced coffee with almond milk and sugar. Lara Bar Peanut Butter Chocolate Chip. (Breakfast to-go in the car ride home from Orlando
Pita with roasted beet hummus, shredded sweet potato, shredded green cabbage, shredded red cabbage, cilantro lime vinaigrette.
Bushes vegetarian baked beans.
Smoothie: Banana, coconut milk, peanut butter
1/2 serving of Singapore Noodles (minus the eggs) from AA Garden Fusion and 1 Tofu Spring Roll
I saved the other half for lunch tomorrow! This place is awesome! It has a bunch of vegan meals and you can adapt any meal you want there since they make it fresh in their wok to order. The staff is super friendly too!
DAY 5 WORKOUT:
I know this is not the typical workout, but we spent the majority of the day cleaning, gardening, and moving furniture. With only getting about 4 hours of sleep last night, today’s busy schedule wiped me out. I’m definitely going to bed early tonight! Don’t be fooled by the 3am live posting of this blog post. I have them scheduled to go out then LOL.
