I know I just got back from vacation, but I really need a vacation LOL. Or at least a staycation or a day off to really just do nothing. Our last vacation was fun, but it was go go go. I honestly can’t even remember the last time I went to the beach and I work a half a block from the beach. I can actually see the beach from my window at work. Well I pretend to because there is a condo in the way.
I’ve been experimenting with quick and easy vegan recipes, so I can spend less time cooking and more time relaxing and this taco recipe is a keeper!
These tropical crabless vegan tacos are so easy to make it may become one of my go-to week night meals! One thing I have struggled with since going vegan, is finding quick and easy meals for dinner that have lots of different textures.
You know what I’m saying? I like a variety of textures, colors and flavors when it comes to eating, so one thing that I have done to make transitioning into a vegan diet so much easier is meal prepping!
I have been adding these bad boys to every thing I eat, pitas, breakfast burritos and now these tropical crabless vegan tacos. Meal prepping has become second nature to me and it’s an easy way to make sure you get in plenty of vegetable and to cut down on cash. Not to mention saving a ton of $$$.
For this recipe I used Gardein’s Mini Crispy Crabless Cakes. They are in the frozen food section where they sell all of the meat alternative products. What I love about Gardein is that they are Vegan and use non-GMO wheat, soy and granola. Plus they go BOGO frequently at Publix and who doesn’t like to save some money!

Crabless Vegan Tacos topped with Cilantro Lime Dressing
Now to the recipe. Simply cook Mini Crispy Crabless Cakes as directed (I cooked mine in a pan on the stove). Add desired filling to taco shells (I added sweet potatoes, and green & red cabbages and then topped mine with a Raw & Vegan Cilantro Lime Dressing.
The dressing is super easy to make. In a little blender like pictured above add
- 1/2 raw cashews
- juice of 1 lime
- juice of 1 lemon
- 1 teaspoon of mince garlic
- 1/4 cup of water
- 4 sprigs of Fresh Cilantro from my garden (so good)
Blend. May add more water for a thinner consistency. You can also add red pepper flakes or jalapeños to give it a little heat! Pretty simple huh?
Guess what?! I devoured one taco and before I could eat another one, my boyfriend had already eaten the other two! He’s not even vegan! I guess that means they passed the taste test LOL.
