You can probably tell another theme of mine. I love homemade protein bars. If you are looking for the perfect grab and go breakfast idea you’ve found it! These are also a great healthy snack to have between meals. I’m happy to share my blueberry pecan protein bar recipe with you 🙂
- 2/3 cup egg whites,
- 6 Scoops Gnarly Whey (or 3 scoops protein powder with ~25g per serving)
- 3 medium bananas,
- 2 Tbsp ground flax seeds,
- 2 Tbsp almond flour/meal,
- 1 teaspoon vanilla extract,
- 1 teaspoon baking powder,
- 15 drops liquid stevia,
- a pinch of salt.
- 6 pecan halves
- 1/2 cup blueberries
Pre-heat oven to 375F. Combine all but the last 2 ingredients in a blender and blend. Next pour the mixture into sprayed baking tin. Top with 6 pecan halves and 1/2 cup blueberries. Bake for 15-17 minutes or until golden brown. The recipe serves 4. Macros per serving. 276 calories, 25.6g Protein, 32.9g Carb, 7.8g fiber, 6.2g Fat.
