These easy roast beef sliders are perfect for game day! They're literally the perfect party food! Each of the individual rolls have tender roast beef, perfect caramelized onions, gouda cheese and spring mix! They make for the best snacks! What more could you ask for??
And if you have any leftover (which I doubt you will) eat the mini sandwiches as an easy meal and pair them with a Caesar salad!
Don't be intimated if you've never cooked roast beef before, it's honestly way easier then you think!
The number one rule to making the perfect London broil is to not open the oven once it starts cooking! I repeat, DO NOT OPEN THE OVEN.
The way to tell when the roast beef is perfect, is when the internal temp reaches 125F. The London broil will still cook a little bit once you remove it from the oven.
Now, I mean you can make this slider recipe with pre-packaged roast beef slices or shaved deli roast beef, but it's not going to be as good.
If you were going to go that route though, I opt for getting Hawaiian sweet rolls instead of slider rolls. And then I'd actually make hot roast beef sliders.
I'd load up those King's Hawaiian rolls with roast beef, a few slices of cheese, maybe some spicy brown mustard, and then put some melted butter on tops of the rolls.
Obviously you'd have to put the bottom portion of the rolls in a 13-inch baking dish or prepared baking sheet so when you cooked it butter and cheese don't go everywhere.

Easy Roast Beef Sliders Recipe Ingredients
- London Broil
- Salt
- Black Pepper
- Garlic Powder
- Slider Rolls
- Spring Mix
- Gouda Cheese
- Sweet Onion
- Honey
- Olive Oil or unsalted butter
How to make Roast Beef Sliders
- Pre-heat oven to 325F degrees
- Combine salt, pepper, and garlic powder into a small bowl
- Cover the London broil with the seasoning mixture.
- Place a metal meat thermometer into the London broil
- Cook for ~60-75 minutes or until the internal temperature reads 125F for medium rare.
- Let the London broil cool
- Slice the sweet onion into thin rings
- Heat a large skillet over medium heat
- Add the olive oil, honey and onions
- Stir occasionally, cooking for about 15 minutes or until onions become caramelized
- Once roast beef has cooled, cut meat as thin as possible
- Place roast beef on the slider bun, and then top with spring mix, gouda, and caramelized onions.
RECIPE TIPS AND SUBSTITUTIONS:
Store leftover roast beef in an airtight container (keep it whole and slice when ready to eat).
Toast slider buns until golden brown to add a little crunch to your Roast beef and cheese sandwiches.
If you like to add a little spice to your slider, try topping it with horseradish sauce.
If you don't have any gouda cheese you can substitute with Swiss cheese, provolone cheese, or cheddar cheese. I wouldn't really recommend parmesan cheese though. It's too dry for this.

What to serve with sliders
Typically when I think sliders, first thing that comes to mind are football parties, backyard barbecues, and in many cases of from past...friend's wedding showers. I mean I did grow up in Edgewater and we had land and there aren't a lot of nice venues around so typically we did everything at friends houses. It's a true small town vibe.
So I'd pair this perfect finger food with easy recipes like Mac and cheese, baked beans, and maybe some deviled eggs. And since you know I used to live in the country and all, I've mastered how to hard boil fresh eggs so they peel easily. Also, if you have leftover eggs, you can make some of this keto potato salad.
Easy Roast Beef Sliders Recipe
Ingredients
- 2-2.5 pounds london broil
- 1.5 teaspoon Salt
- 1 teaspoon Pepper
- 1 teaspoon Garlic Powder
- 8 Potato Slider Rolls
- 2 cup Spring Mix
- 8 oz Gouda Cheese
- ½ medium Sweet Onion
- 2 Tablespoons honey
- 2 Tablespoons olive Oil
Instructions
- Pre-heat oven to 325F
- Combine desired amount of salt, pepper and garlic powder into a small bowl.
- Cover outside of london broil with spices
- Place a meat thermometer into the london broil
- Cook for ~1 hour and 15 minutes or until temperature reads ~125 for medium rare
- Let cool.
- Slice sweet onion into thin rings.
- Heat a large skillet over medium heat.
- Add olive oil, honey and onions.
- Stir occasionally cooking for about 15 minutes or until onions become caramelized.
- Once beef has cooled. Cut meat as thin as possible.
- Place beef on sliders and top with spring mix, gouda, and caramelized onions.
