These Keto Cookies and Cream Fat Bombs taste like cheesecake + cookies and cream ice cream, but are done in a fraction of the time and don’t need to be baked or churned!
So a few weeks ago I made this low-carb instant pot keto cheesecake. It was so freaking good, I literally ate it all in 3 days. Like my boyfriend got two slices of it and I got the other eight.
Since I didn’t want to make the same exact recipe again, I decided to tweak it and make a more portable version of a cheesecake. I opted to combine my boyfriend’s favorite ice cream flavor (cookies and cream) with my cheesecake recipe, so it was a win-win situation.
Let me tell you, these keto cookies and cream fat bombs came out way better than I expected.
Prior to making the recipe I went on the search to 6 different stores until I found something that would act as the chocolate cookie part of the cookies and cream fat bombs. I was in search of a keto chocolate cookie, but I couldn’t find any. What I did find was something better!
I found these Quest Chocolate Beyond Cereal Protein Bars. They’re made with allulose and a prebiotic fiber and have only 2g net carbs per serving! You’ll never believe where I found either! I actually found them at 7-Eleven!
After I made this recipe I told a friend about it and she went to check her local 7-Eleven and they didn’t have them, so just give them a call before you head that way so you can save on gas in case they don’t carry them.
On my way to take my motorcycle endorsement class today, I actually ate one of these on the car ride over along with my keto coffee (coffee + collagen peptides + heavy whipping cream). The bar was super tasty and convenient to have on hand, and I was surprised that it was not super hard like many other protein bars are! It made for the perfect keto breakfast!
To make the “cookies” part of this cookies and cream fat bomb recipe, I took one to the Quest Nutrition chocolate beyond cereal bars, and threw it into a food processor and ground it into small cookie like crumbs.
Then I threw all of the other ingredients (see below) into my ninja blender and combined them until smooth.
Next I scrapped out all of the batter into lined a dish with parchment paper and put it in the freezer for about 10 minutes. Then I scooped out some batter and made 1-1.5inch diameter balls and then rolled those balls into the cookie crumbs.
This recipe made a ton! I’m not sure on the exact amount, because I was eating the batter as I was making it LOL and I ended up keeping a big portion in the bowl which is in the freezer still. I’m thinking about mixing the leftover crumbs and batter together and freezing it into ice cream and them scooping it out and eating it that way! The opportunities are endless with these 2 great combos!

- 1 Chocolate Quest Beyond Cereal Protein Bar
- 1 stick grass-fed butter
- 12oz green-wise or full fat cream cheese
- Juice of 1/2 a lemon
- 2 Tablespoons organic heavy whipping cream
- 1/2 tsp vanilla extract
- 1/2 cup erythritol (powdered or granulated)
- Place the cereal protein bar in a food processor and blend until in crumbs
- Place all remaining ingredients into a blender and blend until combined.
- Scrap batter into a parchment lined bowl and freeze for ~10 minutes
- Once firm, roll batter into 1-1.5 inch diameter balls
- Roll balls onto the chocolate crumbs.
- Serve immediately and keep extras (if any) in the freezer.
