So I normally don't work on the weekends, but I took Monday off this week. I was still recovering from being sick and I wanted to get a few things accomplished before vacation next week. So instead of using another vacation day, I opted to work Saturday instead.
I actually like to work on the weekends because it is less busy and I'm actually able to get way more work done than if I were to work on a normal week day.
As far as vacation goes, it starts on Sunday. Sunday is mother's day, but my mom is having to work so we opted to go out to breakfast on Monday instead since she doesn't have to work until later in the day.
Tuesday morning we'll be heading up to St Augustine, Florida to have breakfast at Maple Street Biscuit Company (if you've never been you have no idea what you are missing!). After that we will be heading to downtown Jacksonville, FL to hit up one of David's favorite places to eat lunch.
Believe it or not, we both lived in Jacksonville at the same time, actually about 10 minutes away from each other and never saw each other once! We even went to the same college and both worked at different Publix's up there too!
Tuesday afternoon we are meeting up with my Aunt and Uncle to watch some of the TPC practice rounds and then are staying to see the Toby Keith concert at sunset. I'm so excited!!!
Wednesday we will be exploring Jacksonville Beach and meeting up with some of his friends from college and work. We will definitely be indulging on some food and may do a little day drinking. Everything in moderation right?
Thursday we'll be back home in New Smyrna and trying to get the house situated and everything packed for the Food Wine Conference in Orlando, FL.
We'll be at the conference Friday, Saturday and Sunday. This will be my second year attending the conference! It was so much fun! I learned so much and meet so many amazing people!
We will be celebrating my 29th birthday that Saturday at the conference. I cannot believe that I am 29 years old! The time has flown!

Ingredients
- 2 large Breeze apples
- 1 ¼ cup butter milk
- 1 large egg
- 1 cup flour
- ¼ teaspoon baking powder
- 1 teaspoon cinnamon
- Dixie Crystals 2 tablespoons sugar
- zest of 1 orange or lemon juice
- dash of salt
- Dixie Crystals Powdered Sugar
- Caramel Sauce
Instructions
- In a large bowl combine buttermilk and egg. Set aside.
- In a small bowl combine the dry ingredients.
- Slowly mix the dry ingredients into the wet ingredients. Dip apple rings into the smooth batter.
- Zest the orange and add to the batter.
- Slice apples into ⅓ inch slices. Thin s;ices are the best.
- Completely cover in batter.
- Fry until golden brown. (I used a deep fryer with peanut oil at 375)
- Top with powdered sugar and caramel sauce. Yummy apple donuts!
- Additionally, you can place the fried rings on a cooling rack before eating.
